Does Maple Syrup Go Bad? Here's How to Keep It Fresh

Pure Vermont maple syrup is one of nature's better inventions. Just sap from a maple tree, boiled down into something delicious.

But here's a question we hear surprisingly often: Does maple syrup go bad?

The short answer is yes. Although pure maple syrup has a long shelf life when properly packaged and stored, it isn't indestructible. Whether you've got a glass bottle, a plastic jug, or one of our convenient Copper Moose pouches, a little proper storage goes a long way.

How Long Does Maple Syrup Last?

It depends on whether the container has been opened.

Unopened maple syrup: Properly processed and sealed maple syrup can generally be stored for up to two years in a cool, dry place. Always follow the storage instructions on the package.

Opened maple syrup: Refrigerate it after opening. Properly stored syrup can maintain its quality for many months, potentially up to a year.

Frozen maple syrup: Freezing is a great option for long-term storage. Because of its high sugar concentration, maple syrup doesn't freeze solid like water.

The secret is keeping air, moisture, and unwanted microorganisms out of your syrup.

Does Maple Syrup Need to Be Refrigerated?

Yes, once it's opened.

An unopened, shelf-stable container can generally stay in a cool pantry away from sunlight and heat.

Once you break the seal, though, it's refrigerator time.

Pure maple syrup contains no added preservatives, and exposure to air can introduce microorganisms that eventually cause spoilage.

Our rule: Open it. Enjoy it. Refrigerate it.

Can Maple Syrup Get Moldy?

Unfortunately, yes.

You may have heard that you can simply skim mold off maple syrup and boil what's left.

That used to be common advice, but food safety recommendations have changed.

Researchers have found that some molds can produce toxins that survive boiling. If you discover mold in your maple syrup, the safest decision is to discard the syrup.

It may be disappointing to throw away good Vermont maple syrup, but it's not worth taking a chance.

Can You Freeze Maple Syrup?

Absolutely.

Freezing is an excellent way to store pure maple syrup for an extended period.

Its high sugar content prevents it from freezing into a solid block, making it relatively easy to use when you need it.

Use a clean, freezer-safe container with a little room for expansion, and make sure it's tightly sealed.

If you're freezing syrup in its original packaging, check that the container is suitable for freezer storage.

What About Maple Syrup in Pouches?

Here at Copper Moose Maple, we're big fans of giving good old-fashioned Vermont maple syrup a more convenient way to travel.

Our pouches are lighter than glass bottles, easier to carry, and designed for easy pouring.

They're especially handy for camping trips, road trips, skiing, hiking, and keeping a little Vermont sweetness close at hand.

But convenience doesn't change the basic storage rules.

Follow the package storage directions for an unopened pouch. Once opened, refrigerate the syrup promptly and keep the pouch properly closed.

For longer-term storage, transfer any leftover syrup to a clean, airtight, food-safe container if needed.

How Can You Tell If Maple Syrup Has Gone Bad?

Watch for these warning signs:

  • Visible mold on the surface or inside the container

  • An unusual fermented or sour smell

  • Bubbling or unexpected signs of fermentation

  • An obviously abnormal appearance

If you're unsure whether syrup is safe, don't taste it to find out. Discard it.

A little crystallization, on the other hand, doesn't automatically mean your syrup has spoiled. Sugar crystals can develop in maple syrup, particularly if it has been stored for a long time or has a high sugar concentration.

The Bottom Line

Pure Vermont maple syrup is wonderfully simple stuff, but even the good things in life need a little care.

Keep unopened syrup properly stored. Refrigerate it after opening. Freeze it for longer-term storage. And if mold appears, throw it away.

Do those things and you'll have delicious maple syrup ready whenever the pancakes come calling.
